Is there a sweat spot for settings or is it down to rider weight etc?

Bit of both. Set the sag to your weight and then set the damping. The setting for compression and rebound as per the manual is a half decent start point.

It's my understanding that the OEM suspension is set-up for a rider weighing around 75 kg.

I cite the book: 'Motorcycle Design and Technology' by Gaetano Cocco, p.27 para 5, in which he states that:
'The average weight of a rider, including motorcycle gear, can be estimated to be around 75 kg....'
(Gaetano Cocco is an Aprilia design engineer/consultant, So, unless the spring rates were tailored to specific countries, the standard spring rates of 9.5 N/mm (F) and 90 N/mm (R) would suit a 75 kg rider.)

My riding weight was in the order of 110-115 kg, so I had the standard 9.5/95 springs changed to 10.5/100. Particularly up-rating the rear, which, with OEM springs, would cause understeer on fast (110 mph) corners. (Though I have to admit, this was a track-only bike.)
