Anyone know the oil capacity of an Ohlins AP8240 rear shock, or a link to documentation containing it?

Don't really work that way on the non emulsion type shocks assuming that model follows their normal method.
 
You brim the ext res and then insert its seperator piston and push it down. That forces the oil into the main chamber and pushes air out of the oilways betwwen the 2. Then close the compression adjuster to stop it flowing back as much as poss. then fill the main body to 10mm from the top, insert the piston and shaft and work out the air by gently pumping .
Once the air is out raise the piston shaft as high as you can without exposing the bleed holes on it and then brim the fluid in the main body.
 
Sometimes air gets stuck in the stack as normal pumping won't seperate the shims. if you think there is air trapped a sharp blow with a rubber hammer on the end of the shaft will open them. Cover the opening with a rag so u dont get a face full.

Just re read the service guide and can't see what I missed. I took it as read you would have the piston ring etc in place so didn't mention that.

edit: got ya now.

2 was not step two it was me trying to be clever as typing on a phone.  Between the 2 as in pushing the air out between the ext res and the main chamber. Ideally you don't want any air between the piston and the oil in either chamber.

A trick I was taught is to slide a piece of thin fishing line in the chamber so that it holds the seal away from the wall a fraction to let the air escape as you push the piston in a little. Then just pull it out once your happy the air is gone. Being thin and rounded it doesn't cut into the seal etc if your gentle.
